When I'm not writing, I love to travel, as many of you know, but I also love to cook. Well...mostly. I eat healthy food a majority of the time, but even I have guilty pleasures. One of those guilty pleasures is chicken alfredo. The very thought of it makes me hungry, even now!
I've rarely met a person who can say no to such a rich, delicious dish. The best part about it is that it's easy to make. Just remember when you are making it to refrain from looking up the calorie count. We ALL have to cheat sometimes, right? ;)
SAUCY ANGEL HAIR ALFREDO WITH CHICKEN
Ingredients
You'll need...
A package of angel hair pasta (or whatever you like)
1 stick real butter (salted is fine, but don't skimp and buy cheap butter--come on now)
3 T. cream cheese
1 pint heavy cream (I like Meadow Gold)
3/4 cup fresh parmesan (not the powdered kind--big no-no!)
Seasonings: salt, pepper, garlic powder
3-4 boneless/skinless chicken breasts, sliced or diced (it's your call)
Broccoli, chopped (as must as you like--I added this so it seems like the dish is slightly healthy)
Directions
I usually have all four steps going at the same time so that everything gets done at the same time. It's a bit tricky, but we ladies (and a few good men) are experts when it comes to multi-tasking. You can do it!
1. Cook your pasta according to the directions on the package.
'Nuff said.

2. While that's happening, add the sliced/diced chicken to a pan on medium heat that's loaded with melted, fatty butter. Add salt, pepper, and garlic powder to taste. I prefer a little more garlic than others, so this is really up to you.
3. While that's happening, melt one stick of butter in a saucepan. When it's melted, add the heavy cream and the cream cheese and stir. Add salt, pepper, and garlic power to taste. When it's hot enough that it's almost boiling, toss in the parmesan cheese, turn the heat down a bit, and stir. If you want it thicker than it is, add a little more parmesan. After all, it's already loaded up, so who cares? Once this is all mixed together, simmer for about ten minutes.
4. While that's happening, steam the broccoli.
Put your pasta on a plate, add the chicken, add the broccoli, add the sauce. And hell, add a bit more parmesan too. Why not?
And woot, there it is.
